“Restaals don’t remain static physically during the winter. They change dramatically in terms of metabolic rates, enzymatic and hormonal profiles. Most of these changes are obvious. Less obvious is the change in their intestinal flora and fauna. Whether the diet change triggers it isn’t totally clear, but their gut changes from one equipped to handle large amounts of vegetable matter to one geared for mostly meat and some grains.
